Chopped Mango pickle, also known as Cut Mango pickle, is a popular variation of mango pickle commonly enjoyed in Kerala. It features bite-sized pieces of raw or semi-ripe mangoes that are marinated and pickled in a tangy and spicy mixture of spices, oil, mustard seeds and vinegar or lemon juice.
Once the mangoes are pickled, they are left to marinate for a few days to allow the flavours to develop and the mangoes to absorb the spices. During this time, the pickle matures and the mango pieces soften slightly while retaining a bit of crunch.
