Inji Puli or Puli Inji, is a traditional Kerala chutney that combines the flavours of ginger, tamarind, jaggery, and spices. This tangy & sweet chutney is a staple in Kerala homes and is used as an accompaniment with idli, dosa, rice, as a spread on rotis, bread, as a dip with nachos, chips, kebabs and many more. No sadhya (traditional festive Kerala meal) is complete without Inji Puli. 

The name "Inji Puli" translates to "ginger tamarind" in Malayalam, reflecting the key ingredients that give this chutney its distinct flavour profile. 

Inji Puli is a delightful blend of flavours that tantalizes the taste buds with its combination of tanginess, sweetness, and spiciness. It starts with the warmth and pungency of fresh ginger that is finely grated to infuse the chutney with its aromatic essence. The ginger adds a zingy and invigorating kick to the overall taste. Tamarind, with its tartness and natural tangy notes, adds a unique sourness to the chutney. It provides a tangy base that balances the sweetness and adds a depth of flavor to the chutney. To balance the tartness of the tamarind, jaggery is added. Jaggery brings a subtle sweetness and caramel-like flavor to the chutney, harmonizing the overall taste and providing a gentle contrast to the tangy and spicy elements. A blend of spices, including mustard seeds, dried red chilies, fenugreek seeds, asafoetida (hing), and curry leaves, is tempered in oil and added to the chutney.
